Grape variety: 100% sauvignon

Soil: clay/limestone and flint

Age of vines: 20 years

Exposure: southwest

Area: 8 ha

Maturation: in thermo-regulated stainless steel vats

Ageing: between 3 and 4 years

Serving temperature: between 10 and 12°C

Our White Sancerre is a dry and fruity wine, on the palate, very fresh with a note of citrus.
This White Sancerre is delightful at aperitif time and a fantastic accompaniment for a plate of seafood, smoked salmon, white meat or the succulent crottin de Chavignol goats cheese.

Cuvée CARTILLE White Sancerre

 

SANCERRE BLANC CARTILLE DOMAINE DES TAYAUX JM et P PASTOU
‘Cartille’ is the word for a ‘parcel’ [of a vine] in France’s Berrichon dialect.

The grapes for this vintage were specially selected when harvested.

The resulting wine is aged in barrels made from oaks from our Malvaux forest.

This vintage releases a slight woodiness, adding to it notes of exotic fruits.

The full flavour on the palate integrates the wood’s tannins well.

Ageing: between 3 and 6 years

Serving temperature: between 10 and 14°C

 

This ‘Cuvée Cartille’ White Sancerre will go well with fish in sauce, but also with a blanquette of veal or a poule au pot [chicken in a pot].
